Pillsbury Cookie Dough

For my International Business class we had to develop a business plan to introduce a new product to the Spanish market. My group decided to do ready-to-bake cookie dough, which Spain does not have! They also don’t really have chocolate chip cookies at all, except at Starbucks. Great idea right? Yumm I want some right now..but anyway, here’s our powerpoint:

Do you think it could work?

Royal Wedding

What I wouldn’t give to have been at the Royal Wedding! First of all because I’m obsessed with Kate Middleton:

  • She’s gorgeous
  • Fashionable
  • Charitable
  • British
  • ummm and now she’s a PRINCESS
Basically she’s perfect, and she was the perfect bride in her Alexander McQueen gown. She even had a princess fairy tale wedding, and said her vows in Westminster Abbey, which is by far my favorite church I’ve ever been too.

JEALOUS.

Peanut M&Ms

For some strange reason, Spainards HATE Peanut Butter, but are OBSESSED with Nutella..

WOOF.

I hate Nutella and am obsessed with Peanut Butter..go figure

But anyway my new favorite “Peanut Butter” fix is peanut M&Ms. Normally at home I don’t really consider them a substitute but here I’m desperate. And Spain is a pretty big produce of peanuts and their peanuts are really good! Again..why don’t they like Peanut Butter?

Barcelona

Barcelona was ahhhhmazing, and visiting made me realize that I should have studied abroad there. It’s the best mix of old and new, modern and classic, beach and city.

Also the food was 10x better than Madrid, and they had so many American and Italian places..it made me so happy 🙂

My favorite restaurant was Morelia, which we stumbled upon by accident.

Roma

Ah the eternal city!

Basically all I did was drink wine, eat pizza, sightsee, eat pizza, get gelato 20 times, eat pizza.

OH, and pretend I was Audrey Hepburn from Roman Holiday. Obviously I’ve been dying to go to Rome ever since I saw the movie when I was little and needless to say it didn’t disappoint.

Although I didn’t meet a Mr. Bradley or have a handsome man drive me around on the back of his vespa, I was enchanted by Rome, and I will definitely be back. I have so much to say about Italia, but I’m writing a paper about my Audrey Hepburn tour of Rome and plan on posting it soon.

Stay tuned…

Spicy Chick Pea Wrap

Ok I’m sorry I can’t help it, we just keep making the best dinners! Sautéed chicken, Feta Cheese, Lettuce, and spicy chick peas rolled in a tortilla. YUMMMM!!

Everything is pretty straight forward, including the chick peas.  Take a couple tablespoons of flour, salt, pepper, cayenne pepper, garlic powder and mix them together in a bowl.  Toss the chick peas in the mixture and sauté in a saucepan with a little bit of olive oil until they have a golden brown, and crunchy coating. Enjoy!!

I’m NOT a Waste of Life!!!

I’ve been super stressed applying for internships and figuring out what to do with my life.  I sent out at least 15 different cover letters and resumes, and was freaked out by how few responses I received, so I sent out another 20 applications.  I’ve had a couple interviews, and a few offers, and now

OFFICIALLY HAVE AN INTERNSHIP FOR SUMMER 2011.

I’m going to be working for Haute Living Magazine in NYC three days a week writing, editing, blogging, and interviewing, and I can’t wait. They cover celebrities, influential people, travel, food, fashion, sports, basically everything so I get to dabble in all sorts of writing. My official letter of acceptance was emailed today, and the position was cleared with SJU so I will be getting credit for it.

Zucchini and Goat Cheese Pizza

YUMMM!!!

My roommate and I were brainstorming dinner ideas and decided to make a pizza since we already had pre-made dough.  We also had some chicken breast and zucchini that we wanted to finish up, but didn’t think it would taste good with tomato sauce.

Result: White Pizza with Goat Cheese, Mozzarella, Chicken, Zucchini, and garlic.

Recipe

  • Pre-made pizza crust
  • Chicken Breast
  • Creamy Goat Cheese (the spreadable kind)
  • Shredded Mozzarella
  • 1 Clove of Garlic
  • 1/2 a Zucchini

Follow the directions on the pizza crust to bake it. While it’s baking, salt/ pepper the chicken breast and sauté or grill until cooked.  Dice or shred Zucchini and chicken into small pieces. Mince garlic. Remove crust from oven, and spread an even layer of Goat Cheese. Sprinkle garlic evenly across the cheese.  Add zucchini and chicken. Top with shredded mozzarella and bake until cheese is melted and crust is golden brown.

¡Buen Provecho!
